Rooting basically unlocks the security systems on your mobile phone making it fully customizable in every possible way. If i say every possible way, then i mean every possible way!
For example, ever wonder of changing the boot loader ( the animation you get while you switch on your mobile) ? or changing the not-so-cool font that you are tired of using? and even remove the bloatware (shitty apps that come pre-loaded) that you don't use..don't like your UI? or even worse don't like the pre-installed OS at all?

for example you own a xiaomi mobile go check your mobile manufacturers official forum website and search for rooting tutorial for your model.
most of the them include a rooting tutorial if you're unlucky finding, don't worry there are different other websites.

They have rooting guide for almost all models (including the chinese ones) just follow the guide and you are good to go!
YouTube is always a best place to get started if you're a complete noob

Bricking your device refers to carrying a brick in your pocket meaning your device will not turn on.
